Five-minute overnight oats with berries
This is the breakfast I come back to most often. It takes five minutes the evening before, keeps for two days in the fridge, and is easy to change depending on what is in the freezer.
Prep: 5 min
Rest: overnight
Serves: 1
About: 420 kcal, 20 g protein
Ingredients
- 50 g rolled oats (not instant)
- 120 g plain Greek yogurt
- 80 ml milk or any plant milk
- 1 tsp chia seeds
- A handful of frozen berries (about 70 g)
- 1 tsp peanut or almond butter
- A pinch of cinnamon, honey to taste
Method
- In a jar, mix the oats, chia seeds and cinnamon.
- Stir in the yogurt and milk until there are no dry pockets.
- Put the frozen berries on top. They thaw overnight and colour the oats.
- Close the jar and refrigerate for at least 6 hours.
- In the morning, stir, add the nut butter and a little honey if you like it sweeter.
If it is too thick in the morning, loosen it with a splash of milk. Rolled oats keep some texture; instant oats turn to mush.
Variations
- Apple pie: grated apple, extra cinnamon and a few chopped walnuts.
- Cocoa: 1 tsp cocoa powder and half a sliced banana.
- More protein: swap half the milk for kefir or add a scoop of unflavoured protein powder.
